Cheese and walnut salad

Ingredients for 4 servings:

  • 150 g cheese (Emmental)
  • 40 g walnuts
  • 250 g pear(s)
  • 1 onion(s), small
  • Parsley
  • 1 tbsp vinegar (grape must), white, or other
  • 1 tsp mustard
  • Iodized salt
  • pepper
  • 3 tbsp oil (sunflower)
  • Sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Roughly chop the walnuts and lightly toast them in a pan without fat, then let cool. Cut the Emmental cheese into small cubes. Peel, halve, core, and dice the pears. Peel the onion and slice it into fine rings. Pick the parsley leaves and mix them with the prepared ingredients. Combine the vinegar, mustard, salt, and pepper, add the oil, and whisk to combine. Season the salad dressing with salt, pepper, and sugar and mix with the salad ingredients. Let it sit for at least 30 minutes. Serve with hearty farmhouse bread. Tip: The easiest way to combine the ingredients for the salad dressing is to put everything in a clean jar with a screw top, close it tightly, and then shake vigorously. This way, you can also prepare larger portions of salad dressing in advance – simply store the jar in the refrigerator for a few days, shake again before use, and pour the desired portion over the salad.
