Cheese crumble cake with currants

Ingredients for 16 servings:

  • 300 g flour
  • 1 pinch of salt
  • 275 g sugar
  • 250 g margarine, soft
  • 500 g currants
  • 2 m.-sized eggs
  • ½ lemon(s), untreated, (peel and juice)
  • 500 g quark (low-fat quark)
  • 1 pc. pudding powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix flour, salt, 150g sugar, and 200g fat into small pieces to make crumble. Press 2/3 of this into a greased 26cm springform pan as the base. Pre-bake in a hot oven (electric oven 200°C) for about 10 minutes. Wash and strip the currants. Spread 2/3 of the fruit on the base. Separate the eggs. Beat the egg whites until stiff. Whisk 50g fat, 150g sugar, lemon zest and juice until frothy. Stir in the egg yolks, quark, and custard powder. Fold in the beaten egg whites. Spread the quark mixture over the berries. Mix the remaining berries and crumble, and sprinkle over the top. Bake at the same temperature for about 50 minutes. Allow to cool.
