Cheese omelet in a pepper ring

Ingredients for 2 servings:

  • 1 large red bell pepper(s)
  • 1 large green bell pepper(s)
  • 3 eggs
  • 100 g mountain cheese
  • Salt and pepper, black
  • Paprika powder, sweet
  • 1 tsp chives
  • 2 tbsp olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Finely chop the mountain cheese and chives. Whisk the eggs in a bowl, add the spices, mountain cheese, and chives, and mix well. Cut the bell peppers into slices about 1 cm thick. Only use the whole rings. Reserve the rest for another purpose. Add 1 tablespoon of olive oil to each of two large pans and heat. Then place the bell pepper rings in the pans and spoon the egg mixture into the pepper rings. Reduce the heat. After 2 minutes, flip and fry on the other side. Of course, this dish can also be prepared in just one pan or for several people. In this case, however, I recommend keeping the finished omelets warm in the oven.
