Ingredients for 1 servings:
- 500 g flour
- 60 g cheese
- 1 pinch of coriander
- 1 pinch of nutmeg
- 1 tsp salt
- 20 g yeast, fresh
- 250 ml water or whey, lukewarm
- 2 tbsp oil
- Cheese for sprinkling

easy and quick to make, ideal for leftover cheese
Grate the cheese and mix with all the other ingredients (except oil and water or whey). Crumble the yeast and mix in as well (no pre-dough is necessary; I’ve tried both and noticed no difference). Knead with oil and water until a dough forms. Cover and let the dough rise for 1-3 hours. Then shape it into a roll and cut out about 17 pieces. Fold the strips of dough together and press down lightly with the cupped hand. Do the same with the remaining pieces of dough. Place the rolls on a baking sheet lined with baking paper, brush generously with water, and add a heaped teaspoon of grated cheese to each one, pressing down firmly. Cover and let rise for 30 minutes to an hour. Bake in a preheated oven at 180°C (350°F) for 20 to 25 minutes; the cheese should only brown lightly around the edges. If you like, you can also add some whole caraway seeds to the dough. Of course, you can also make nice round rolls, but I prefer the ones above and think they look nicer. I think they go well with the melted cheese. These rolls are great for parties! Makes about 17 rolls.
