Basic recipe with homemade spaetzle

Spätzle: Mix the flour, semolina, eggs, and salt with the water to form a smooth batter until it bubbles. Let stand for 10 minutes. Then, using a spätzle sieve or spaetzle press, press the spaetzle in batches into boiling salted water. As soon as the spätzle floats, scoop them out with a slotted spoon and place them in a bowl of warm water. Drain until all the spätzle are done. Then sieve. Finely chop an onion and fry it in a pan with the diced bacon. After about 5 minutes, add the spätzle, stir a few times, then add the thinly sliced ​​cheese. Stir frequently until golden brown. We recommend drinking a glass of black tea afterward.
