Cheese spaetzle

Ingredients for 4 servings:

  • 500 g flour
  • 5 eggs
  • 200 ml water (between 150 ml and 200 ml)
  • 1 pinch of salt
  • 2 tbsp oil
  • 300 g cheese (Emmental)
  • Pepper, white
  • 2 m.-sized onion(s)
  • Fat for the mold
  • Breadcrumbs for the mold

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

Prepare the spaetzle dough according to a basic recipe. To prevent the spaetzle from getting cold, you can keep them warm in the oven. Peel and finely chop the onions, and fry them in a hot pan until browned. Grate the cheese (or use already grated cheese). Grease a baking dish and sprinkle with breadcrumbs. Starting with a layer of spaetzle, add the onions, pepper, cheese, and more spaetzle, onions, and so on into the baking dish. Make sure the last layer is cheese. Bake in a preheated oven at 180°C on the second rack from the bottom until a golden crust has formed. Serve hot. Alternatively, you can put all the ingredients in a pan. Fry over medium heat, turning frequently, until the cheese has melted and the spaetzle (if they were cold) is piping hot again. You can also coat the spaetzle in breadcrumbs before adding them to the pan.
