Cheese spaetzle with honey onions

Ingredients for 3 servings:

  • 300 g spaetzle
  • 200 g cheese (various spicy varieties, e.g. Appenzeller and Allgäu mountain cheese, half/half)
  • 50 g Emmental cheese, grated
  • 200 ml cream
  • 1 large onion(s)
  • 2 tbsp honey
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Cook the spaetzle according to the package instructions. Slice the onion into half rings and sauté until dark brown. Just before the end, add half of the honey and let it caramelize slightly. Grate the spicy cheese. Mix the cream with the other half of the honey and season generously with salt, pepper, and paprika. Mix the onions, spaetzle, and spicy cheese thoroughly and place in a baking dish. Pour the cream over the top and sprinkle with the grated Emmental cheese. The Emmental cheese layer should not be dense. Bake in a preheated oven at 180°C (350°F) for about 25 minutes. Serve with a green salad.
