Ingredients for 12 servings:

  • 180 g flour
  • 1 tsp baking powder
  • 70 g sugar
  • 2 egg yolks
  • 80 g margarine
  • ½ liter of milk
  • 200 g sugar
  • 2 pts. pudding powder, vanilla
  • 1 pt. lemon(s) – peel
  • 3 points of cream quark, 250 g each
  • 3 egg whites

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Make a shortcrust pastry from flour, baking powder, sugar, 2 egg yolks, and 80g margarine and bake in a springform pan at 200°C for 20 minutes. Make a vanilla pudding from the milk, sugar, and vanilla pudding powder. Fold in the quark. Heat the mixture briefly again, but do not boil, and fold in the lemon zest. Fold in 3 beaten egg whites. Spread the quark mixture over the base. Mix 1 egg yolk with a tablespoon of cream and brush it onto the quark. Bake on the bottom rack of the oven at 125°C for about 1 hour. Let cool in the pan. Ideally, overnight.
