Cheesecake with biscuit base

Ingredients for 1 servings:

  • 300 g biscuits (chocolate biscuits, e.g. cookies)
  • 80 g butter or (low-fat) margarine, soft
  • 150 g white chocolate coating
  • 150 g sugar
  • 125 g cream
  • 600 g cream cheese (e.g. Philadelphia, balance or regular)
  • 3 eggs
  • 1 tbsp cornstarch
  • n. B. Lemon juice, freshly squeezed

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

First, crumble the biscuits as finely as possible and knead into a dough with the softened butter. Press the mixture firmly into a springform pan and chill briefly. Melt the chocolate coating and mix with the cream until creamy. Beat the cream cheese and sugar together. Stir in the chocolate coating and cream. Add the eggs and cornstarch. Then stir in the lemon juice. Spread this mixture over the biscuit base. Bake in a preheated oven at 160°C for approx. 70 minutes. Then let it cool thoroughly. First in the oven with the door open, then for at least another 2 hours. Tip: If you like, you can sprinkle the cake with cocoa powder.
