Ingredients for 1 servings:

  • 450 g Skyr, e.g. with honey flavor
  • 1 packet of vanilla pudding powder
  • 3 eggs
  • 100 g sugar
  • 1 pinch of salt
  • 17 ladyfingers
  • e.g. raisins
  • n. B. Candied lemon
  • e.g. powdered sugar

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 50 minutes

You can also make the cake without a base, i.e., without sponge fingers. Candied lemon peel or raisins are a matter of taste. You can use any flavor of skyr or Greek yogurt for the yogurt. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Mix the egg yolks and sugar well. Add the skyr and custard to the egg yolks and mix until no lumps remain. Fold in the egg whites. Add raisins, candied lemon peel, or nothing at all, depending on your mood. Line a 26cm baking pan with sponge fingers. You’ll need a little more than half a pack. Spread the batter over the sponge fingers and bake in a preheated oven at 170°C (350°F) for about 30 minutes. Let cool completely, then enjoy.
