Cheesecake without a base

Ingredients for 1 servings:

  • 250 g butter
  • 300 g sugar
  • 5 egg yolks
  • 500 g quark (low-fat quark)
  • 2 packs of pudding powder, vanilla
  • 6 egg whites
  • 1 tsp baking powder
  • 1 egg yolk
  • 2 tbsp condensed milk

Working time approx. 10 minutes; Total time approx. 10 minutes

Ideal for silicone molds

Beat butter, sugar, and egg yolks until thick and foamy. Stir in quark, pudding powder, and baking powder. Beat egg whites until stiff peaks form and fold in. Pour the mixture into a 26cm round tin. Mix the egg yolks with the condensed milk and brush over the cake. Bake in a preheated oven at 180°C (160°C fan assisted) for 80 minutes. Allow to cool for 10 minutes before turning out. As a variation, you can also add fruit to the batter. The cake tastes best when it’s still warm.
