Ingredients for 1 servings:

  • 300 g cheese (medium-aged Gouda)
  • 300 g flour
  • 200 g butter or margarine

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Grate the cheese and knead the dough with flour and butter. Shape it into a roll about 5 cm in diameter. Let it rest in the refrigerator for 30 minutes. Then cut the roll into 3 mm thick slices and place them on a baking sheet. Bake the cookies in a preheated oven at 150 degrees Celsius for about 15 minutes. Be careful not to let them brown, as this will make them bitter, but they should have a very tender, brown edge. Tip: The dough freezes perfectly in rolls; about 250 g of dough is enough for one baking sheet. If you know the rule of three, you can easily adjust the list of ingredients to avoid any leftover grated cheese.
