Ingredients for 1 servings:

  • 250 g cheese (old Gouda) in one piece
  • 200 g butter, cold
  • 200 g flour and a handful for the worktop
  • 2 egg yolks
  • 1 m.-sized egg(s)
  • 1 pinch of salt
  • 1 pinch(s) of sugar
  • 1 tbsp poppy seeds or caraway seeds or sesame or chili (for spicy cookies) etc.

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Makes about 80 savory biscuits for snacking, also very good in the spicy version

Grate the cheese freshly and set aside about 2 tablespoons. Knead the cheese, butter (cut into pieces), 200g flour, and egg yolk together until smooth. Divide into at least 2 portions and refrigerate for about 1 hour. Roll out the first portion of dough on a lightly floured surface to about 0.5cm thick. Cut out shapes like mushrooms or clover leaves using cookie cutters and place on a baking sheet lined with baking paper. Beat the egg and brush the pastry with it. Then sprinkle with cheese and poppy seeds, etc. Bake in a preheated oven (200°C, fan oven 175°C, gas mark 3) for 10-12 minutes. Repeat with the remaining dough while the first baking sheet is in the oven.
