Cherry Almond Bread

Ingredients for 1 servings:

  • 120 g oat flakes, fine
  • 300 g flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 tsp baking soda
  • 60 g margarine
  • 150 g sugar
  • 2 eggs
  • 250 ml buttermilk (fruit buttermilk cherry)
  • 250 g cherry(s), pitted, fresh, frozen or drained from the jar
  • 100 g almonds without skin, roasted, chopped
  • 100 g dark chocolate, coarsely chopped
  • 4 tbsp almond flakes

Preheat the oven to 190°C. Grease a loaf pan (30 x 11 x 7.5cm) or line it with baking paper. Combine the oats, flour, baking powder, salt, and baking soda in a bowl. Cream the butter and sugar until fluffy. Add the eggs and beat for two minutes. Then add the fruit buttermilk. Pour the oatmeal and flour mixture into the egg mixture and mix lightly. Carefully fold in the cherries and add the chocolate with the chopped, toasted almonds. Pour the batter into the baking pan and sprinkle the flaked almonds on top. Bake the bread for 55 minutes. It is recommended to test for doneness after 45 minutes.
