Vanilla yogurt – lemon – muffins

Ingredients for 12 servings:

  • 1 lemon(s) , (juice)
  • 150 g yogurt (vanilla)
  • 2 eggs
  • 100 ml cream
  • 80 ml oil
  • 1 tsp sugar (lemon sugar or Citroback)
  • 120 g sugar
  • 50 g corn flour (can also be replaced with regular flour)
  • 250 g spelt flour (regular flour works too)
  • ½ tsp baking soda
  • 2 tsp baking powder

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk all liquid ingredients, plus lemon sugar and regular sugar, until fluffy. Combine the remaining dry ingredients and quickly mix with the other ingredients. Just enough to form a smooth batter. Then pour into the muffin tins and bake in a preheated oven (170°C) for about 20-25 minutes. Tip: Do the toothpick test.
