Cherry Amaretto Dessert

Ingredients for 8 servings:

  • 2 jars of sour cherries
  • Amaretto, as desired
  • 600 g double cream cheese or mascarpone
  • 750 g quark, 20% fat
  • 180 g sugar
  • 600 g cream

Place the sour cherries from the jar in a bowl with several tablespoons of Amaretto (depending on taste) and marinate for about 6-8 hours. Then drain the cherries well (you won’t need the juice later). Set the cherries aside. For the quark cream, mix the cream cheese with the quark (low-fat quark works for those on a calorie conscious), the sugar, and 100g of cream until smooth. Then whip 500g of cream until stiff peaks form and fold it into the quark mixture. Now put half of the mixture into a large glass bowl, spread the sour cherries evenly on top, and then pour the other half of the quark mixture over the cherries. Then chill. For children, you can simply save a small amount of unmarinated sour cherries and serve an extra portion.
