Ingredients for 1 servings:

  • 1 cake base, vegan (recipe in the CK database)
  • 1 jar cherry(s)
  • 1 packet of cream pudding powder or vanilla pudding powder
  • 2 packs of cake glaze, vegan
  • 125 g margarine
  • 1 can chickpeas (425 ml can, approx. 120 ml water)
  • ¼ tsp xanthan gum
  • ¼ tsp cream of tartar baking powder

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Bring the cherry juice to a boil with the custard powder, cake glaze, and margarine, then let it cool. For the aquafaba, whisk the chickpea water with xanthan gum and cream of tartar until stiff peaks form. Carefully fold the cherries and the cooled cherry custard into the aquafaba. Spread the mixture over the cake base and decorate as desired. You can also use other fruits (e.g., pineapple or blueberries). If the cake base is too thick, you can also cut it in half and use the other half for something else.
