Ingredients for 1 servings:
- 200 g biscuits (amaretti biscuits)
- 130 g butter, melted
- 200 g powdered sugar
- 130 g cream
- 200 g double cream cheese
- 1 jar of cherries (680g)
- 4 tbsp cornstarch
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
Place the amaretti biscuits in a plastic bag and roll over them with a rolling pin until they are finely crumbly. Mix the amaretti biscuits, butter, and half of the powdered sugar in a mixing bowl. Spread the mixture into a 25x30cm baking dish and mash it with a potato masher to form a firm base. Cover with plastic wrap and refrigerate. Whip the cream. Mix the cream cheese with the remaining powdered sugar and fold in the whipped cream. Spread the mixture over the biscuit base. Drain the cherries well, then heat the cherry juice over low heat. Mix the cornstarch with a little water and stir into the hot cherry juice. Remove from the heat as soon as it thickens and add the cherries. Let cool. Spread the cherry mixture over the amaretti cheese base and refrigerate for about 2 hours. Tip: Alternatively, you can use other biscuits for the base.
