Cherry casserole from Rosa

Ingredients for 6 servings:

  • 1 jar cherry(s) , ( 720 ml ) or
  • 500 g cherry(s), fresh
  • 3 tbsp sugar
  • 2 eggs
  • 80 g sugar
  • 1 packet of vanilla sugar
  • 100 g ground almonds
  • 60 g flour
  • 1 tsp, leveled baking powder
  • 50 g almond(s), in flakes
  • 2 tbsp sugar
  • 2 tsp cinnamon
  • Butter and breadcrumbs for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Butter a baking dish and spread the breadcrumbs in it. Add the drained cherries to the dish and sprinkle with 3 tablespoons of sugar. Separate the eggs, beat the egg whites until stiff, then slowly add 80g of sugar, along with the vanilla sugar and egg yolks. Mix the ground almonds, flour, and baking powder and carefully fold into the egg mixture. Pour the batter over the cherries. Mix the almond flakes with the cinnamon and sugar and spread over the casserole. Bake in a preheated oven at 200°C for about 20 to 30 minutes until nicely browned. This goes well with vanilla sauce, cream, cherry sauce, or, best of all, vanilla ice cream. One more note: I usually peel 200g of almonds myself, add 100g finely ground to the batter, and add the rest, slightly chopped, on top. We simply like these almonds better.
