Ingredients for 3 servings:

  • 500 g low-fat curd cheese
  • 150 ml milk, 1.5% fat
  • 250 g sour cherries, frozen
  • 60 g raw cane sugar, see note
  • some vanilla, ground

Thaw the sour cherries and then purée lightly with a hand blender. Whisk the low-fat quark with the milk until smooth. Add the raw cane sugar and vanilla and stir in. Finally, stir in the sour cherries. Makes 3 large servings of approximately 300g each, ideal as a protein-rich snack. You can also divide the mixture into 4-6 servings of approximately 240g, 190g, or 150g each for dessert. Note: With 60g of raw cane sugar, this quark contains as much sugar as store-bought cherry quark. If you don’t like it too sweet, reduce the sugar content. For those with a really sweet tooth, you can, of course, increase the amount of sugar.
