- 500 ml juice (cherry-apple juice) or other red, sweet juice
- 50 g semolina (spelt semolina or wheat semolina)

Dessert with only 2 ingredients, vegan without refined sugar
This is a very simple recipe that can be prepared the day before. I call it “cherry mousse” because it has the consistency of a fruit mousse. Bring 500 ml of juice to a boil, then slowly add 50 g of semolina while stirring. Simmer the mixture for 5 minutes until it reaches a thick consistency. Remove the pot from the heat and let it stand for 5 minutes, then place it in ice water and beat the mixture with an electric mixer for 5-10 minutes. The color will change from red to pink and the mixture will double in volume. The cherry mousse can be poured into small glasses and refrigerated overnight to set. Just before serving, top with chopped fruit and vanilla sauce or vanilla yogurt. We serve it with cashew cream and top it with roasted pecans or walnuts. The fruit mousse can also be eaten immediately after preparation, for example, over fruit salad.
