Cherry mousse

Ingredients for 2 servings:

  • 1 tbsp psyllium husks
  • 100 g cherry(s), frozen
  • 100 ml coconut milk
  • 2 tbsp sunflower seeds or similar
  • 1 tbsp xylitol (sugar substitute) or sugar
  • ½ tsp vanilla extract
  • 1 pinch of cinnamon

Instructions

Working time approx. 5 minutes; Rest time approx. 30 minutes; Total time approx. 35 minutes

vegan and delicious

Blend the frozen cherries and sunflower seeds with the coconut milk in a blender or similar. Then mix in the rest. Refrigerate for about 20-30 minutes. The mousse is very filling, so don’t eat too much of it after a meal.
