Cherry muffins with crumbles

Ingredients for 12 servings:

  • 50 g butter or margarine
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 125 g flour
  • ½ tsp baking powder
  • 1 jar sour cherries
  • 100 g flour, maybe a little more
  • 75 g sugar
  • 75 g butter
  • 1 packet of vanilla sugar
  • powdered sugar
  • lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the batter, beat the butter, vanilla sugar, and sugar until fluffy, then add the eggs, one at a time. Stir in the flour and baking powder, a tablespoon at a time. Divide the batter among 12 muffin cups. Drain the cherries and scatter them over the batter. For the crumble, melt the butter and mix with the flour, sugar, and vanilla sugar. If the mixture isn’t crumbly, add more flour. Divide the crumble among the cups. Place the muffins in the oven preheated to 175°C (350°F) and bake for 15-20 minutes. In the meantime, make a glaze from powdered sugar and lemon juice. Drizzle this over the muffins immediately after baking.
