Ingredients for 4 servings:

  • 6 rolls (small milk rolls)
  • 4 eggs, separated
  • ½ liter milk, warm
  • 125 g sugar
  • 1 tbsp vanilla sugar
  • 3 tbsp cherry brandy
  • 50 g raisins, soaked in cherry brandy
  • 50 g butter
  • 1,000 g cherries

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Scrape off the crusts from the rolls and mix the breadcrumbs with a pinch of cinnamon. Bring the milk to a boil and pour it onto the cut rolls while still hot. Cover and let it soften. Whisk the egg yolks, sugar, and vanilla sugar until frothy. Add the raisins soaked in kirsch, the remaining kirsch, the soaked torn rolls, and the stemmed sweet cherries. Beat the egg whites until stiff peaks form and gently fold them into the mixture with a large wooden spoon. Transfer the mixture to a buttered dish, sprinkle with the cinnamon breadcrumbs, top with knobs of butter, and bake for 1 hour at 175°C.
