Ingredients for 4 servings:

  • 2 kg apples
  • 2 tbsp, levelled sugar
  • ¼ liter apple juice
  • some lemon juice
  • Cinnamon, ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the apples, cut them into eighths, and core them. Melt 2 level tablespoons of sugar in a saucepan until caramelized (approx. 2 minutes). Then add the apple slices and stir vigorously over reduced heat until the caramelized sugar begins to separate slightly from the bottom of the pan (another 1-2 minutes). Then add 0.25 liters of apple juice, cover, and cook until the apples are completely soft. Then mash the apples with a potato masher. Add a little more apple juice to achieve the final consistency, if desired. Finally, season to taste with sugar, lemon juice, and cinnamon.
