Cherry sauce for beef steak

Ingredients for 2 servings:

  • 2 steak(s) , (beef steaks)
  • 250 g sweet cherries
  • 200 ml port wine
  • 1 tbsp soup vegetables (home-salted) or stock cubes or similar.
  • 2 tbsp balsamic vinegar
  • 1 tbsp butter
  • 1 garlic clove(s)
  • Thyme
  • Salt, dose carefully
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sear the beef steaks and place them on a preheated dish in the oven at 120°C. Briefly sauté the soup vegetables and a clove of garlic in a hot pan and deglaze with the port wine. Add half of the pitted cherries and simmer on low heat for 20 minutes. Once the sauce has reduced sufficiently, puree everything with a hand blender, season with salt and pepper, and add the balsamic vinegar. Add the remaining cherries to warm through. Before serving, stir a knob of butter into the sauce and sprinkle with a few thyme leaves.
