Cherry sparkling wine jelly

Ingredients for 1 servings:

  • 750 ml sparkling wine
  • 750 ml cherry juice (e.g. leftover morello cherries in a jar)
  • 1,000 g gelling sugar, 2:1

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the sparkling wine, cherry juice, and 1000g of gelling sugar in a 2:1 ratio in a saucepan. Bring to a boil, then continue bubbling for 4 minutes. Pour hot into rinsed jars, immediately seal, and turn upside down. Let cool, then turn upside down. It also makes a lovely gift!
