Cherry tomato salad with Parmesan

Ingredients for 4 servings:

  • 600 g cherry tomatoes
  • ½ bunch mint
  • 1 lemon(s), the juice
  • 5 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 50 g Parmesan cheese, in one piece
  • some salt
  • some pepper
  • some sugar

Tomato salad with a twist!

Combine the balsamic vinegar, sugar, salt, and pepper with the lemon juice, then add the olive oil in a thin stream while stirring. Mix the dressing with the halved cherry tomatoes and let it sit for about 10 minutes. Pick the mint leaves, finely chop the leaves if desired, and sprinkle over the tomatoes. Fold in coarsely shaved Parmesan cheese. You can also make the salad with buffalo mozzarella. In this case, basil works better than mint, and the dressing can be refined with 2 teaspoons of pesto.
