Ingredients for 1 servings:

  • 4 egg yolks
  • 160 g sugar
  • 125 ml milk
  • 1 vanilla pod(s)
  • 200 g chestnut puree
  • 2 cl brown rum
  • 2 egg whites
  • 50 g sugar
  • 500 ml cream

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes

For a 1.5-liter dish. Whisk the egg yolks and sugar until creamy. Bring the milk to a boil with the split vanilla pod. Slowly add the hot milk to the egg and sugar mixture using a ladle, whisking constantly. Return the cream to the pan and, stirring constantly, form a rose. Beat the cream with a hand mixer until lukewarm, then stir in the chestnut puree and rum. Chill everything thoroughly. Beat the egg whites with the sugar until very stiff peaks form. Carefully whisk into the chestnut cream. Whisk the cream until stiff peaks form and carefully fold in. Pour into a dish and freeze for at least 3 to 4 hours.
