Ingredients for 1 servings:
- 6 egg whites
- 6 egg yolks
- 260 g sugar
- 1 tsp cinnamon
- ½ tsp vanilla, ground
- 200 g butter, soft
- 1 tbsp lemon peel
- 1 shot of brown rum
- 280 g flour
- ½ pack of baking powder
- 1 shot of coconut milk
- 1 tbsp chia seeds
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes
Mix the sugar with the cinnamon and vanilla. Beat the 6 egg whites with half of the sugar, cinnamon, and vanilla mixture until stiff peaks form. Cream the softened butter with the other half of the sugar, cinnamon, and vanilla mixture until fluffy. Add the egg yolks and rum and beat for at least 5 minutes, until the mixture is light and creamy. Sift the flour and baking powder together, then gradually stir in. Add the coconut milk and chia seeds. Finally, carefully fold in the beaten egg whites. Preheat the oven to 180°C (top/bottom heat). Grease a round cake pan well, pour in the batter, and bake in the oven for 50 minutes. The calorie information refers to 1 of 12.
