Chia lemon curd with nuts and fruit

Ingredients for 4 servings:

  • 500 g low-fat curd cheese
  • 300 ml milk or plant milk
  • 50 g chia seeds
  • 50 g agave syrup or 30 g honey
  • 1 pinch of salt
  • ½ lemon(s)
  • 20 g nuts, mixed, roasted
  • 20 g muesli of your choice
  • 40 g fruit of your choice

Whisk the low-fat quark, milk or plant-based milk, agave syrup, lemon juice, and a pinch of salt until smooth. Then add the chia seeds and stir evenly. Chill for at least an hour, preferably overnight, to allow the seeds to swell. This will give a nice consistency. This amount is enough for 4 breakfast servings. Topping: 1/2 fruit, 1/4 nut, 1/4 muesli – a total of about 80g per serving – and spices to taste. My personal favorite in fall/winter: 0.5 ripe pear, 20g roasted, chopped walnuts, 20g muesli, and perhaps a pinch of cinnamon. Also delicious with warm plum preserves, 20g mixed nuts, 20g muesli, and a pinch of anise, cinnamon, or coffee spice mix. Frozen berry mix (thawed or already stirred into the chia quark mix), 20g roasted nut mix, 20g berry muesli, 0.5 apple, 20g roasted almond slivers, 20g muesli, 1 pinch of cocoa powder and cinnamon powder, 1 kiwi, 20g desiccated coconut or coconut chips, 20g muesli
