Ingredients for 10 servings:

  • 1 large egg(s)
  • 180 ml milk, e.g. cow’s milk, almond milk or cashew milk
  • 2 tbsp chia seeds
  • 1 tbsp agave syrup or liquid honey
  • 2 pears, ripe
  • 85 g whole wheat flour
  • pinch(s) of salt
  • 2 tsp baking powder
  • 2 tbsp coconut oil or coconut fat, melted
  • Coconut oil for baking

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 30 minutes

Beat the egg in a bowl. Add the milk, chia seeds, and agave syrup and mix. Let it rest for 10 minutes so the chia seeds can absorb some of the liquid. Core the pears (peel them if you like), grate them, and add them. Finally, combine the dry ingredients in a bowl and stir in. Add the coconut oil and make a smooth batter. Heat 1-2 teaspoons of coconut oil in a pan and cook the pancakes. Each side takes about 3-4 minutes. Sliced ​​pears, caramelized in a little honey in the pan beforehand, or a dollop of yogurt or quark are great toppings.
