Chia pudding with honey nuts

Ingredients for 2 servings:

  • 150 ml coconut milk
  • 150 ml milk
  • 15 g chia seeds (approx. 1.5 tbsp)
  • 2 packets of vanilla sugar
  • 1 tsp sugar
  • 10 pecans
  • 1 tbsp honey

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Bring the coconut milk, milk, sugar, vanilla sugar, and chia seeds to a boil and simmer for 20 minutes on low heat. Stir occasionally. Let cool until lukewarm, stirring occasionally to prevent a skin from forming. Divide between bowls and refrigerate. Lightly toast the pecans in a dry pan, add the honey, and caramelize for 1 minute. Place the nuts on top of the cooled pudding and drizzle with the remaining honey. You can also make this with other nuts.
