Ingredients for 1 servings:
- 600 g spelt
- 150 g oats
- 100 g millet
- 3 tbsp golden flaxseed
- 500 g spelt flour type 630
- 3 tbsp chia seeds
- 2 bags of dry yeast
- 1 tbsp raw cane sugar
- 3 tsp salt
- 200 g cranberries
- 150 g walnuts, chopped
- 2 bananas, ripe
- 800 ml water, lukewarm
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 3 hours
Soak the 3 chia seeds in a cup with about 50 ml of water. Finely grind the spelt, oats, millet and flaxseed. Put all the dry ingredients in a bowl, mix with a whisk, then add the soaked chia seeds and the water. Mix everything into a dough and knead for a good 8 minutes. A food processor is better for this. Then let the dough rise in a warm place for about 1 hour; it should double in size. Knead the dough again. Pour into 2 small or one large greased tins, brush with water and let rise for another 20 minutes. Then bake at 190 degrees Celsius for about 1 hour. Tip: you can use raisins instead of cranberries. The bread is rich in nutrients and keeps you full for a long time.
