Ingredients for 4 servings:
- 2 kg chicken thighs
- ½ tbsp vinegar
- ½ tbsp soy sauce
- 2 bay leaves
- 10 peppercorns
- 1 clove(s) garlic, pressed
- 1 stalk(s) cinnamon or 1 star anise
- 1 tbsp sugar

Philippines
Place the chicken thighs in a saucepan and add the remaining ingredients. Cook over high heat with the lid on for 5 minutes. Then cook over medium heat for 45 minutes. If you want the meat to be very tender, cook for an additional 45 minutes. Remove the skin from the chicken before eating. Variations: You can also use other meats: 1.2 kg chicken + 1 kg lean boneless beef or pork; – or – 1.8 kg boneless pork (cut the meat into bite-sized pieces!)
