Chicken and avocado baguette

Ingredients for 2 servings:

  • 150 g chicken, cooked and diced
  • 1 avocado(s)
  • 1 small onion(s)
  • 1 onion baguette
  • Cheese, grated
  • cream cheese
  • lemon juice
  • olive oil
  • salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel and pit the avocado, place it in a bowl, and mash it finely with a fork. Finely chop the onion and add it to the bowl with the avocado. Add the cooked, diced chicken, a little olive oil, and a squeeze of lemon juice to the avocado and mix everything well. Season with salt and pepper. Cut the baguette open, spread a thin layer of cream cheese on both sides, and then spread the cheese evenly over the top. Bake both halves of the baguette in the oven at 200°C (convection oven) for about 15 minutes, until the cheese has melted. Remove the baguette from the oven and spread the avocado-chicken spread on top. Instead of the onion baguette, you can of course use any other baguette or even toast. I cut the finished sandwich into strips at the end to make it easier to eat.
