  • 80 g chicken breasts, grilled, shredded
  • 1 ½ cup(s) Chinese cabbage, cut into strips
  • ¼ cup mint, fresh, crushed
  • 1 small peach(s)
  • 2 tbsp lime juice or lemon juice
  • 1 tsp olive oil

Instructions

Combine the chicken breast, Chinese cabbage, and mint in a bowl. Peel the peach and slice it, then toss it with the salad. Combine the lime or lemon juice with the olive oil and stir the dressing into the salad. It’s ideal for summer and as a light lunch or snack at work.
