Ingredients for 1 servings:
- 1.2 kg peach(s), large (approx. 1.800 kg gross weight)
- 400 g gelling sugar 3:1
- 1 pack flavoring (vanilla – baking)
- ½ pack flavoring (orange baking)
- ½ pack of citric acid

Halve, pit, and peel the peaches. Finely chop the flesh and then puree coarsely or very finely, depending on your desired consistency. Stir in the gelling sugar, vanilla extract, orange extract, and citric acid. Place everything in a large saucepan and heat, stirring constantly. When it starts to bubble, boil for another 3-4 minutes, stirring constantly. Remove from the heat and immediately pour into jars, seal the lids, and turn upside down. Allow to cool thoroughly. Makes about 5-6 small jars. Important: The first time I made this, I made the mistake of letting the mixture with the pureed peaches stand for a few hours before cooking it. This prevented it from setting properly. Therefore, once the peaches have been pureed, the mixture must be cooked immediately. However, you can mix the finely chopped peaches with the other ingredients and let them sit for a few hours and then prepare as described. The latter method is recommended if you don’t want puree, but rather fruit pieces.
