Chicken and vegetable casserole with Harzer cheese

Ingredients for 3 servings:

  • 400 g chicken fillet(s)
  • 1 cauliflower
  • 1 onion(s)
  • 1 garlic clove(s)
  • 500 g tomatoes
  • 100 g Harzer cheese
  • 40 g Parmesan
  • Vegetable broth, quantity see instructions
  • salt and pepper
  • Paprika powder
  • Cayenne pepper

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Low-carb

Preheat the oven to 180°C (fan/convection oven). Wash the cauliflower and divide it into florets. Place the florets in a saucepan and cover them with vegetable stock, boil for 5-10 minutes, and then drain well. Cut the chicken into bite-sized pieces and fry briefly with a finely diced onion and garlic. Season the meat well. I personally used salt, pepper, cayenne pepper, and paprika. Roughly dice the tomatoes and Harzer cheese and mix with the seared chicken and Parmesan cheese. Place the cauliflower in a casserole dish, followed by the chicken mixture. Bake the casserole for 15-20 minutes, until the surface is lightly browned and the cheese is melted.
