Chicken breast fillet my way

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • salt and pepper
  • Herbs of Provence
  • 1 onion(s)
  • 2 garlic cloves, optional
  • 1 shot of red wine
  • 2 tbsp tomato paste, approx.
  • 1 can of tomatoes, chopped
  • ¼ liter chicken broth, if needed
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Own creation

Season the fillets with salt, pepper, and Provençal herbs. Purée the chopped tomatoes and add about 2 tablespoons of tomato paste. Add the diced onion. Puree everything with a hand blender and season with salt and pepper. Heat oil in a pan and sear the seasoned chicken fillets well on all sides. Remove briefly. Chop the garlic and sauté briefly in the hot oil. Carefully add the puréed tomatoes to the pan and add a splash of red wine. Add the fillets and simmer with the lid closed for about 20-25 minutes over low heat, turning the fillets if necessary and adding more stock if needed. Serve with rice.
