Chicken breast fillet with Chinese vegetables

Ingredients for 2 servings:

  • 500 g chicken breast fillet(s)
  • 3 tbsp butter
  • 1 cup of tzatziki
  • 1 pack of mixed vegetables (Chinese vegetables), frozen, approx. 750 g
  • 6 tsp herbs de Provence
  • 1 tsp paprika powder
  • 1 tsp salt
  • 1 tsp pepper

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

with tzatziki filling

Pat the chicken breast fillets dry with kitchen paper. Then prepare the spice mix. Mix the spices well and sprinkle them over the chicken breast. Heat a pan with plenty of butter and fry the chicken breast until golden brown. Line a pan with baking paper and place the chicken breast on top. Sprinkle both sides with Provençal herbs. Use plenty of it. If you like, you can also place a bay leaf on the breast. Wrap each chicken breast individually in the baking paper and seal tightly. Preheat the oven to 150°C fan/convection oven or 170°C top/bottom heat. Braise the chicken breast in the baking paper for half an hour. Fry the vegetables in the pan until tender. After half an hour, remove the parcels from the oven and unwrap them. Then cut into the chicken breast and fill the spaces with tzatziki. Serve the chicken breast with the vegetables. If you like, you can also add onion rings, finely chopped bell peppers, and lemon juice to the parcels and braise them along with the meat. It’s super fresh.
