Matjes, strawberry and asparagus tartar

Ingredients for 2 servings:

  • 1 herring fillet(s)
  • 2 stalk(s) asparagus, green
  • 100 g strawberries
  • 1 tbsp strawberry vinegar
  • some agave syrup or honey
  • 2 tbsp oil, neutral
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 18 minutes

Wash the asparagus and peel the bottom third. Blanch the asparagus in boiling water for three minutes. Then rinse with cold water. Wash and hull the strawberries. Finely dice the herring, asparagus, and strawberries, setting aside the asparagus tips and a few strawberries for garnish. For the marinade, combine the vinegar, agave syrup, salt, pepper, and oil. Mix the herring, asparagus, and strawberries with the marinade, season to taste, and serve with a garnishing ring.
