Chicken breast in balsamic sauce

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • Salt
  • Paprika powder
  • oregano
  • rosemary
  • chili flakes
  • Clarified butter, for frying
  • 2 tomatoes
  • 500 ml broth
  • 2 tbsp Balsamic vinegar, (currant, recipe from Nouche2000)
  • Sauce thickener, dark or flour dough for binding

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Mediterranean spiced – a light summer dish

Score the tomatoes crosswise and pour boiling water over them. Then peel and dice. Wash the meat, pat dry, and season with the spices. Sear it all over in hot fat. Reduce the heat, deglaze with stock, stir in the balsamic vinegar, and simmer the whole thing covered for about 15 minutes. Remove the meat from the stock and keep warm. Add the diced tomatoes to the stock and season with salt and pepper. Bring the sauce to a boil and thicken if necessary. Slice the fillets and serve with the sauce. Caramelized new potatoes go best with this!
