Quick turkey pan with zucchini in curry sauce

Ingredients for 2 servings:

  • 250 g turkey breast
  • 350 g zucchini
  • 1 large onion(s)
  • 1 clove(s) garlic
  • 150 ml milk or cream
  • 100 g cheese (soft cheese in brine)
  • 2 tbsp crème fraîche
  • 2 tbsp tomato paste
  • 1 tsp curry powder
  • 2 sprigs of oregano
  • 2 sprigs of thyme
  • 2 sprigs basil
  • salt and pepper
  • 2 tbsp olive oil

Coarsely grate the zucchini and squeeze the excess water. Peel and finely dice the onion. Cut the skinless turkey breast into strips or cubes and fry in 1 tablespoon of olive oil in a hot, non-stick pan until browned, then remove from the pan. Add 1 tablespoon of oil to the pan and brown the diced onion. Add the squeezed zucchini and crushed garlic and fry briefly over high heat. Stir in the tomato paste and curry powder and deglaze with milk. Mix in the diced soft cheese, crème fraîche, a little salt and pepper, and the chopped herbs. Let it marinate briefly, then season to taste. Serve with pasta, rice, or Ebly, and salad.
