Ingredients for 4 servings:
- 4 pieces of chicken breast
- 5 tbsp olive oil
- 2 garlic cloves
- 50 g parsley, flat-leaf
- 50 g breadcrumbs
- some salt
- some white pepper
- 1 tbsp olive oil
- 120 g goat’s cheese
- some chives
- some white pepper
- some salt
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Wash and dry the chicken breast. Cut a pocket into each breast. Cut the chives into small rolls. Mix with the goat’s cheese, salt, and pepper. Stuff the chicken breast with the mixture, fold it over, and secure with a toothpick if desired. For the breading, peel the garlic and place it in a blender with the parsley and breadcrumbs. Season the mixture with salt and pepper and place it on a plate. Pour olive oil onto a plate and toss the chicken breast in the oil, then coat it with the herb breading. Preheat the oven to 200°C and roast the meat for about 20 minutes.
