Chicken breast with broccoli

Ingredients for 3 servings:

  • 2 m.-sized onion(s)
  • 1 tbsp sunflower oil
  • 500 g chicken breast fillet(s)
  • 600 g broccoli
  • 500 g mushrooms
  • 200 ml vegetable stock
  • 200 ml cream
  • 1 tbsp lemon juice
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel and finely chop the onions, and sauté in oil until translucent. Cut the chicken breast fillets into 1 cm thick slices, fry with the onions until golden brown, and remove from the pan. Wash and chop the broccoli and mushrooms, and sauté in the vegetable stock until the vegetables are tender. Then add the cream and season with pepper, salt, and lemon juice. Cook everything over medium heat for about 2-3 minutes, stirring constantly, until the cream thickens. Best served with rice.
