Chicken breast with peanut and coconut milk sauce

Ingredients for 3 servings:

  • 500 g chicken breast fillet(s)
  • 2 garlic cloves
  • 1 bell pepper(s), red
  • 2 tbsp oil
  • 2 tbsp soy sauce
  • 2 tbsp peanut butter
  • 1 tbsp curry
  • 400 ml coconut milk
  • 1 small jar of bamboo shoots
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cut the chicken breast into approximately 1 cm wide slices or dice. Dice the garlic cloves and bell pepper. Heat oil in a pan or wok and sear the meat and garlic until crispy. Add the paprika, soy sauce, curry sauce, coconut milk, and peanut butter and simmer for about 5 minutes over low heat. Drain the bamboo shoots and add them. Season with salt and pepper.
