Chicken breast with pistachios

Ingredients for 4 servings:

  • 4 skinless chicken breasts
  • 150 g blue cheese, Roquefort or other
  • 2 tbsp breadcrumbs
  • 3 tbsp pistachios, chopped
  • 3 tbsp butter, soft
  • 1 oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 200°C. Season the chicken breasts with salt and pepper, brown them in oil for 4 minutes on each side, and place them in a baking dish large enough for all the breasts to lie side by side. Crumble the cheese, mix it with the breadcrumbs, butter, and pistachios, and spread it over the chicken breasts. Bake in the oven for 10-15 minutes.
