Chicken, Brie, and Apple Sandwich

Ingredients for 1 servings:

  • 1 roll, ciabatta
  • 1 tbsp mustard, fig
  • 4 slices of cheese (Brie)
  • 1 chicken breast fillet(s)
  • 2 leaves of fresh spinach
  • 1 apple (not too sour)
  • oil
  • Thyme
  • oregano
  • basil
  • Salt
  • rosemary
  • Sugar
  • Cinnamon powder
  • Remoulade or mayonnaise
  • possibly garlic spice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

with leaf spinach and apple slices

Preheat the oven to 180°C. Thinly slice or pound the chicken breast fillet so it fits easily on a sandwich. Mix the herbs and rub them into the meat. Fry in hot oil until browned to your liking. Slice the apple and sprinkle them with sugar and cinnamon. Wrap them in aluminum foil and place them in the oven for about 5-10 minutes. Cut open the roll and spread one side with remoulade or mayonnaise (sprinkle a little garlic seasoning over it if desired) and top with the two spinach leaves and the Brie cheese. Spread the other side with fig mustard and top with the apple slices from the oven and the chicken. Return everything to the oven until the Brie has melted. Then put the halves back together, cut in half, and serve. Serve with chips, fries, or a salad.
