Chicken broth with cream cheese dumplings

Ingredients for 4 servings:

  • 250 g cream cheese
  • 4 egg yolks
  • 2 bunches of parsley
  • 100 g breadcrumbs
  • 600 g sugar snap peas or other vegetables of your choice (e.g. carrots, broccoli …)
  • salt and pepper
  • nutmeg
  • 1 liter chicken broth (preferably homemade)
  • salt water

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cut the snow peas into wide strips. Finely chop the parsley and mix with the cream cheese, breadcrumbs, and egg yolk. Season with salt, pepper, and nutmeg and let stand for a while. Then form the cream cheese mixture into small balls and place them in boiling salted water. Let them simmer for 10 minutes. Cook the snow peas in the chicken broth for about 4 minutes. Place the cream cheese balls on a plate and serve with the chicken broth.
